When I shoot copywork I put a softbox on either side far enough away that no reflections show.
The key is to meter. Make sure the light is even, side to side and top to bottom.

Paul, when I shoot paintings I use 2 difuse lights at 45 degrees to the image, one on each side. This gives nice even light from edge to edge. I also use a polarizing filter on the lens to keep the reflections down on oil paintings or other shiny paints that could blow out the color.

Looks like a pretty intense paint by numbers kit, don't remember them beeing so complex. Good job.
