About
Well I noticed the sky is really washed out. Not sure how/if I could touch that up in ps. It was a very rainy trip, I begged my dad to come home early because I couldn't handle the nonstop rain and nothing to do.
You're right . . the sky in these recent shots is overexposed. Usually, auto settings meter the light and since the majority is dark the shutter and aperture are set to compensate and that means the relatively light sky is overexposed. This happens frequently even to the best photographers (though they have learned to watch for it and compensate for it). Your camera uses contrast-detection autofocus in normal mode, which ranges from 1.0 feet (30 centimeters) to infinity.
To compensate in PS . . . there are a variety of approaches which might work. What I, personally, would do is select the sky . . . and correct for light levels and midtones on the sky only . . . BEFORE working on the entire shot. PS access to the light levels is Control-L . . . Once the sky has some definition . . . deselect and proceed as usual.
You have some good ideas about shots and composition. I hope this helps you in post-processing.

PS: Always a good idea to ask pointed questions . . . sometimes people are reluctant to point out EVERYTHING they think would help for fear that you might think they just HATE your work. This isn't the case, I'm sure . . . but asking questions invites serious responses!
