About ....this shot is about stress, when cattle get stressed the ph level in their system is elevated and their meat color is effected.....regrettably cattle are put to the slaughter, if they are handled poorly and stressed in the lead up to this event then up goes their ph level and their meat turns dark, hence they are known in the meat industry as 'dark cutters'.......reckon there are a few potential dark cutters amongst us, best settle down and focus on the present moment...never mind dinner!
