All I did was reduce the saturation to -100. For the elephant shot I reduced to the saturation only down to about -10, so that some of the green remained in the grass portions. I sharpened the whole image a little, but didn't do any layers of sharpening or blurring.

This is quite stunning. How exactly did you edit the colour out? The Zebra is so crisply black and white. Did you blur the background in PS? CC
