You've captured it well. Are these oil or wood fired evaporators? I spent one short season stoking once - it's hard work.

It is that time of year. Yummm Maple Syrup is so sweet. It's a lot of work. We tried it a couple of times, but decided it was better to let those with the proper equipment do it. I'll bet there are many on UF who may never have seen a sugar shack in operation. Nice series.
