Hi Nate,
I was just recently there. It depends what you want you take pictures of. The colorfull houses, The JD Salinger wildlife alligator where various birds migrate and you may even get lucky and get a shot of an alligator or croc there.
The Sanibal stoop so often called because after a high tide or storm, almost everyone comes out and collects the sea shells there. There is one spot I do regret not taking a picture of. My excuse? Left the camera with the boyfriend on the other side of the beach so it wouldn't get damaged while I collected shells. Then I stood up and saw a perfectly white sandy beach with a blue sky and tree trunks sticking out of the soil and a red hammock nearby. That was the only real shot I saw worthy during my trip. Again, it depends what you're going for. I want to go back just to recapture that one shot if I could since "someone" :) didn't bring the camera as they came to get me. This was while I was walking towards captiva's direction which is the next town. Hope this helps out. good luck.
P.S. bring a tripod and cable release if you'll be shooting astro photography, the stars are amazing there!

DO take your tripod if you can, I was just down visiting friends in Ft. Myers and got a couple hours out at the beach on Sanibel. Unfortunately, my tripod didn't fit into the suitcase. Take note that the shorebirds on the beaches side are used to humans, you can get quite close to them, a 300mm lens will get you a full frame shot of sandpipers, gulls and sanderlings. This may be a problem on a sunny day, especially weekends when the beaches are really busy, I was out and about on a cloudy morning, lots of birds, few humans. Don't overlook some neat shots of shells as mentioned earlier. Check the conditions, that area was just hit by a massive red tide. This left a few dried up dead pufferfish on the shore, maybe not a pleasing image for some, but possibilites of some interesting shots.
