There are so many places its hard to say. I would definitely try to get to Polihali Beach for a Sunset. I didnt get there this last time. With baby and all......
Waimea Canyon, but dont stop at the first lookout where all the buses and tours go. Keep headed up the road and you will see many little lookout points right next to the road. After those stops keep going up road all the way up to Kokee Lodge area. Interesting musuem and shop. Spend some time in the large grass area that they have there. The weather up there is completely different from where you just came from below. After that continue up that road until the road stops and then take a 30 min hike to the end to see Kaulaulau Valley(spelling is wrong I think). If its cloudy spend 30 minutes there and it will most likely change. The north shore is great as well. Invest in a book on some of the hikes they have in Kauai. The is one in Kokee thats unreal once you get to the end. The name is Awaawapuhi Trail its easy going down and the view at the end is SPECTACULAR. Going back is quite strenuous.
