Greeting Mark, My only suggestion would be to use a filter, at the time of shoting, You might try a bit of post processing in a photo shop program, but I dont think you will be able to acheive the result your looking for witout coming right out and painting the sky. If you have a program that will work in layers and isolated the area you wish to change, it might be possible however I have never had much luck with this, it always looks Painted and "touched up.
